How to infuse tequila
Infusing spirits is a great way to bring new flavours to your cocktails. Our bartenders share some simple tips on infusing tequila with chillies.
A bottle of tequila (We use Olmeca Altos Reposado)
Two large chillies, finely chopped (plus one or two whole chillies to leave in the bottle)
– Finely chop two chillies and place them straight into the bottle
– Place the lid back onto the bottle and give it a good shake
– Leave the chillies to steep for five or six hours, but check every hour to ensure it isn’t getting too spicy
– Remove the finely chopped chillies – you can then add whole chillies to the bottle (these are for display and won’t increase the heat)
