Cocktail of the month: Yorkshire Sunrise

On 1 August we’ll be celebrating Yorkshire Day with a Yorkshire Sunrise. Bartender Stuart Clarke showcases York gin (made less than five miles away from our bar) in a refreshing summer spritz-style cocktail.
You’ll need: a Boston shaker, a Hawthorne strainer, a fine strainer and a wine glass.
Ingredients
50ml York gin
25ml grapefruit juice
25ml kiwi syrup
Fever-Tree aromatic tonic
Garnish: grapefruit wedge
Method
– Add the the ingredients to the shaker, and then shake over cubed ice until the tin frosts over
– Double strain into a wine glass filled with cubed ice
– Top with tonic
– Garnish with a wedge of grapefruit
