Cocktail of the month: June Sunset
The second of our June cocktail specials comes from Bartender Emma McNicholas. Made for sipping on long, balmy summer nights, the June Sunset is a heady mix of strawberry, mint and lychee.
You’ll need: a Boston shaker, a Hawthorne strainer, a fine strainer and a rocks glass.
28g strawberry jam
15ml mint syrup
20ml lychee liqueur
30ml Slingsby vodka
Handful of mint leaves
Half a lime, juice only
Garnish: mint sprig, strawberry sliced in half
– Add all of the ingredients to a Boston shaker and shake over cubed ice until the tin frosts over
– Double strain into a rocks glass filled with cubed ice
– Garnish with a mint sprig and strawberry that’s been sliced in half
