Cocktail of the month: Aqua Antica
One of two cocktails for June, Bartender Joe Hancher has shaken up the traditional ‘sour’ (mostly commonly made with whisky) and swapped the spirit base for vermouth. With a touch of spice courtesy of the pink peppercorn syrup and freshness from a handful of basil leaves, it’s a cocktail for those who fancy trying something a little bit different.
You’ll need: a Boston shaker, a Hawthorne strainer and a rocks glass.
Ingredients
50ml Antica Formula vermouth
Half a lemon, juice only
25ml pink peppercorn syrup
1 egg white
8 basil leaves
Garnish: basil leaf
Method
– Add the vermouth, lemon juice, pink peppercorn syrup, egg white and basil leaves to a Boston shaker and dry shake (without ice)
– Add cubed ice and shake again until the tin frosts over
– Strain into a rocks glass filled with cubed ice, and garnish with basil leaf
