Cocktail of the month: Coconut Daiquiri

Coconut Daiquiri

Our September cocktail of the month comes from Rob Willis, who’s put a twist on the classic Daiquiri by using coconut rum.

You’ll need a Boston shaker, Hawthorn strainer, fine strainer and a coupe glass.

Ingredients

50ml Koko Kanu coconut rum
12.5ml sugar syrup
Whole lime, juice only
Garnish: pineapple leaf, desiccated coconut, lime juice

Method

– Rub the rim of the glass in lime juice, and then coat in the desiccated coconut. Put to one side
– Add all of the ingredients to a Boston shaker and shake with ice
– Fine strain into the glass and garnish with a pineapple leaf
